摘要:以山西壶瓶枣为原料,采用生物酶解法和超声波辅助提取法,研究比较两种提取方法的得率。通过单因素试验和正交试验研究了影响枣粉中多酚得率的各个因素。最终还比较了四种不同的干燥方法的干燥完全性。研究表明,在生物酶解法中,各因素对多酚得率的影响程度从高到低依次为酶比>添加量>温度>时间,确定了最适宜的条件是纤文素酶:果胶酶为1:2、酶添加量为2ml、温度为53℃、时间为60min;在超声波辅助提取法中,各因素对多酚得率的影响程度从高到低依次为乙醇浓度>功率>时间>料液比,确定了最适宜的条件是乙醇浓度70%、功率480W、时间45min、料液比1:15;在干燥工艺比较中,各方法对山西壶瓶枣中多酚物质干燥完全程度从大到小依次为冷冻干燥>真空干燥>鼓风干燥>风干。31034

The extraction and selection of drying process of poly-phenol in jujube in Shanxi
Abstract:To research and compare the extraction rate of the biological enzyme method and ultrasound-assisted method in shanxi jujube.Through single-factor test and orthogonal test,making a research about how the factors affecting the poly-phenol.Finally,I also compared four different drying processes to confirm which one is the best.The research shows that the influence of each factor in biological enzyme method of shanxi jujube rated high to low is enzyme ratio > amount> temperature> time,and the best condition is cellulase:pectinase equals 1:2、amount equals 2ml、temperature equals 53℃、time equals 60 minutes.The influence of each factor in ultrasound-assisted method rated high to low is ethanol concentration> power> time> solid-liquid ratio,and the best condition is ethanol concentration equals 70 percent、power equals 480W、time equals 45 minutes、solid-liquid ratio equals 1:15; the influence of each factor in drying process of shanxi jujube rated high to low is freeze drying> vacuum drying> blast drying> dry.
