摘要:本课题选用了胡萝卜汁作为原料,植物乳杆菌、双歧杆菌以及嗜酸乳杆菌作为菌种,主要研究了益生菌在胡萝卜之中的发酵特性以及发酵果蔬汁在冷藏条件下的货架期寿命,研究结果可以为益生菌果蔬汁饮料提供理论依据。实验结果表明以10DCU/100L的植物乳杆菌在37℃的条件下,以Brix20的胡萝卜汁为基料进行发酵效果最好,最终活菌数达到2.99×109 cfu/mL。在发酵胡萝卜汁的货架寿命实验中发现:当贮藏时间达到11天时,发酵胡萝卜汁中的活菌数达到最高,4.3×109 cfu/mL。通过正交实验,得到发酵胡萝卜汁饮料的配方:40%胡萝卜汁、0.10%柠檬酸、3%蔗糖。23242

Study on fermented carrot beverage with high number of viable cells
Abstract: These experiments choose the carrot juice as raw materials, with Lactobacillus、Bifidobacterium and Lactobacillus acidophilus as stains. The main research was about the characteristics of the lactobacillus in fermented carrot juice and pitaya juice and the determination of the shelf life of fermented fruit and vegetable juice under refrigeration . The analysis will provide theoretical basis and basic parameters for vegetable and fruit juice drinks fermented by probiotics. The results showed in Lactobacillus 10DCU/100L under the conditions at 37 ℃ of Brix20 fermented carrot juice best results for the base material to reach the final viable cell count of 2.99×109 cfu / mL. For the determination of shelf life, when the time is 11 days, the number of species has reached its 4.3×109. In the sensory evaluation of carrot juice fermented in the formulation of the optimum concentration of 40% carrot juice, 0.10% of citric acid and 3% sucrose added.
