    摘要:全球变暖背景下,极端低温发生的频率、强度和持续时间都不断加强。低温是影响小麦品质最重要的环境胁迫之一。因此,深入分析并量化低温胁迫对小麦籽粒蛋白质及其组分的影响,可以为未来气候条件下我国小麦品质的提升和经济效益的提高提供理论依据。本研究于孕穗期在全自动人工气候室中实施了模拟的自然温度日变化规律下不同品种、不同低温水平和低温持续时间的小麦盆栽试验,以明确孕穗期低温胁迫对小麦籽粒蛋白质及其组分形成的影响。结果表明,温度越低,低温持续时间越长,蛋白质及其组分的变化幅度越大。孕穗期低温提高了小麦籽粒中总蛋白、清蛋白和球蛋白的含量,降低了谷蛋白含量。在低温处理2天的情况下,醇溶蛋白含量随着温度的降低而升高,当低温持续时间增加到4天和6天时,醇溶蛋白含量随着温度的降低呈下降的趋势。研究结果还表明,低温水平对小麦籽粒中蛋白质及其组分的影响大于低温持续时间。另外,孕穗期低温处理下,ACDD每增加1˚C•d,扬麦16和徐麦30的总蛋白质、清蛋白、球蛋白、醇溶蛋白和谷蛋白的相对含量分别增加0.41%和0.48%,0.96%和1.26%,2.12%和0.98%,-0.38%和0.62%,-1.87%和-1.35%。28121

    Effect of Cold Stress during Booting Stage on the Concentrations of Grain Protein and Its Components of Wheat
    Abstract: Climate change has resulted in a continuous increase in the frequency, intensity, and duration of extreme cold stress events. Cold stress is one of the major environmental stresses, which have serious effects on wheat grain quality. Understanding and quantifying the responding mechanism of grain quality formation to cold stress will provide theoretical guidance for wheat grain quality improvement. Environment-controlled phytotron experiments under different low temperature levels and durations at booting stage were conducted to investigate the impacts of simulated cold stress on the concentrations of grain protein and its components of wheat. The results showed that, the contents of grain protein and its components varied with the low temperature levels and durations. The low temperature during the booting stage increased the contents of total protein, albumin and glutelin, while decreased the contents of globulin for both Yangmai16 and Xumai30. Under 2 days of low temperature treatment, the contents of gliadin showed the increasing trends with the low temperature for both cultivars, while during the 4 and 6 days of low temperature treatments, the contents of glutelin showed the decreasing trends. Moreover, the grain protein and its components contents were more sensitive to low temperature levels than low temperature durations. In addition, for every 1˚C•d increase of ACDD at booting, the contents of total protein, albumin, globulin, gliadin and glutelin of Yangmai16 and Xumai30 increased by 0.41% and 0.48%, 0.96% and 1.26%, 2.12% and 0.98%, -0.38% and 0.62%, and -1.87% and -1.00%, respectively.
