摘要:无花果是一种高营养、高药用、低热量的新型保健型水果,柔软适口,甘甜美,含有丰富氨基酸和多种矿物质和微量元素,此外还有多糖、酶类及脂类等。由于无花果果皮的保护性作用较差,果目在成熟过中易产生开裂,采收集中在温度较高的夏秋两季,因此,无花果采后极易产生腐烂变质。本实验采用以“布兰瑞克”无花果为试验材料,调节包装袋内采用19 % CO2+3 % O2进行自发气调,贮藏于2.0~5.0℃、RH 59.5~62%,28 d。与对照相比,气调包装能够有效抑制无花果可溶性固形物、可滴定酸、维生素C等营养物质的损耗,降低腐烂率和失重率,维持无花果较高的营养价值,同时还可以提高超氧化物歧化酶SOD、过氧化氢酶CAT、过氧化物酶POD酶活性,抑制PPO酶的活性,从而延长贮藏期。43596

Effects of Modified Atmosphere Package on Physiological and Biochemical Characteristics of Fig during cold storage
Abstract:Sweet and delicious fig is a high nutritional, good medicinal, low calorie new health care fruit riching in amino acids and a variety of minerals and trace elements, in addition to polysaccharides, enzymes and lipids. As the protective effect of fig peel is poor, the fruit harvest period is in the summer and autumn, therefore, figs easily decay. In this experiment, "Branswick" figs were used as the test material, which were packaged with 19% CO2 , 3% O2 and stored at 2.0~5.0℃,59.5~62% relatively humidity for 28 days。 The result showed that modified atmosphere package(MAP) could effectively inhibit the loss of fig soluble solids, titratable acid, vitamin C and other nutrients, reduce the decay rate and weight loss rate, maintain the high nutritional value of figs, improve SOD(Superoxide dismutase), CAT(Catalase) , POD(Peroxidase) enzyme activity, also inhibit polyphenol oxidase (PPO) activity.
