摘 要：通过分析淮安美食旅游在发展中存在的优势：即悠久的历史文化渊源、优越的地理区位与交通、渐趋完善的美食旅游配套设施与宣传和发展中存在的劣势：即美食旅游市场定位混乱、消费场所不够成熟、美食项目开发力度不够、品牌形象知名度低。采用了实地考察与数据分析的方法，从体验的视角，结合体验化设计原则，研究出淮安美食应侧重于引导顾客参与、满足个性需求、体现本地特色、明晰体验定位、注重过程体验这五大方面。以期形成自身独特的淮扬菜美食旅游文化品牌。67822

1  前言

旅游产业具有低投入高产出，无污染的绿色产业特征，越来越受到地方政府的重视。淮安作为全国历史文化名城，本身就有丰富的旅游资源。而淮扬美食做为淮安旅游产业的重要组成部分，原应是发展最为迅速，效益最好的一块，但是由于发展模式的局限，目前淮安的美食产业发展不尽如人意。
