摘要课题餐饮中型半自动切菜机,顾名思义,是专为酒店、餐馆和食堂设计一款可供代替人工切菜的机械设备。实则主要是针对根菜类和薯芋类蔬菜进行切削加工的切片切丝机,使得这类蔬菜经由片状最终成为丝状的过程,之后提供给厨师烹饪。本次毕业设计是建立在原有切菜机的设计以及国内外切菜机研发现状的基础上,对其设计要求、工作原理和可行性等方面进行系统分析后独立完成的创新设计。此论文着重就餐饮中型半自动切菜机的整体结构设计进行讲解说明,具体包括原理方案设计,送菜装置、切削机构和传动机构设计以及主要零部件的结构设计,并对其中一些需要检验的零件进行校核,看是否满足设计要求。切菜机需要手工操作,菜的添加与收集以及机器的控制均是人力辅助完成,电动机提供动力采用带传动传递,再经由直齿轮实现运动方向的转变。切削机构结构简单,主要由U形刀架、刀片细轴、刀片短轴和切片切丝刀片组成。刀片中心孔与刀片细轴嵌套装配,两端用圆螺母和圆螺母止动垫圈固定锁紧。刀片细轴和短轴之间采用类似于日光灯安装方式的装配结构,如此方便刀片的拆装和更换,以实现对蔬菜切削形状的控制,从而满足对不同种类蔬菜长度、宽度和厚度三个因素的需求和把握,这点可谓是弥补了现有技术的不足。切菜机整体采用立式布置,结构紧凑,操作简单,细节考虑周到且增添了观察罩的人性化设计,不仅方便了解切菜的进展情况也增强了使用过程中的安全性,改进切削方式,提高了切菜机的工作效率。50068

Abstract
The topic of design of medium-sized semi-automatic shredder for catering, by definition, is a mechanical device designed for the hotel,restaurant and cafeteria which available to instead of man to do the cutting. But in reality it is a slicing-shredding machine mainly for root vegetables and yam vegetables’ cutting, making these vegetables through the process of flake eventually become filamentous, then provided to the chef. The graduation project is based on the design of the original shredder and the status of shredder research at home and abroad, a innovative design independently after the systematic analysis of its design requirements, working principle, feasibility and other aspects. This paper focuses on to explain and illustrate the design of the overall structure of medium-sized semi-automatic shredder for catering, specifically including the design of principle of program, food delivery device, cutting mechanism and transmission mechanism, and structural design of the main parts, and some parts need to be inspected be checked to see if it meets the design requirements. The shredder requires manual operation, adding vegetables and collection, and the control of machine are human assisted done. The motor provides power what is passed by the belt drive, and then through spur gears for motion-direction changes. Cutting mechanism is simple, mainly insists of the U-shaped knife, the blade thin shaft, blade minor shaft and slicing-shredding blade. Blade center hole with the blade thin shaft nested assembly, and ends are fixed and locked by around nuts and round nut washers. The nested between the thin blade and the short shaft axis the method similar to that of incandescent lamp mounting assembly structure, so make the removal and replacement of the blade become conveniently, in order to achieve control of the shape of the vegetable cutting, to meet the different kinds of vegetables, length, width and thickness of the three demand factors and grasp this point can be described as made up of the prior art. Shredder overall uses vertical layout, compact structure, simple operation, and thoughtful details added the humanized design of observation cover, easy to understand not only the progress of the cutting process but also enhances the security of use, improves cutting method what improves the working efficiency of shredder.
