摘 要:本文研究了柚皮中制备膳食纤维的最佳制备条件及膳食纤维的组成、性能。 以柚皮为原料,用乙二醇的碱溶液作为溶剂脱除柚皮中的木质素,从而得到膳食纤维。以提取pH、固液比、时间为因素进行单因数平行实验,确定最佳提取条件;用紫外/可见分光光度法对膳食纤维降血糖、胆固醇性质进行吸附研究。结果表明,柚皮中膳食纤维的最佳提取条件为NaOH浓度0.1mol/L,固液比1:6,时间30min;膳食纤维中可溶性膳食纤维含量为9.30%,不可溶性膳食纤维含量为41%,还原糖含量为17.63%,水分含量为3.13%,脂肪含量为3.4%;膳食纤维持水力为5.31g/g;膨胀率为3.8ml/g;持油力为6.16g/g;葡萄糖吸附率为23.4%;胆固醇吸附率为22.6%。该研究为柚皮的开发利用和膳食纤维的提取提供参考。54473

Abstract: This paper studied the best condition of making dietary fiber from pomelo peel and the composition and properties of dietary fiber made.The lignin was extracted using ethylene glycol from pomelo peel to acquire dietary fiber.The orthogonal test was designed to determine the best extracting condition with the extracting pH, solid-liquid ratio and time. The properties of dietary fiber were determined that the sugar and cholesterol in the blood were absorb by dietary fiber.The results showed that the best making conditions of dietary fiber from pomelo peel were the concentration of 10% NaOH, 1:6 solid-liquid ratio and 60min.The composition of dietary fiber are 9.3% soluble dietary fiber, 41% insoluble dietary fiber, 17.63% reducing sugar, 3.13%water and 3.4% fat. The water-holding capacity of dietary fiber is 5.93g/g, the swelling capacity of dietary fiber is 18.45mL/g and the fat absorption capacity of dietary fiber is 6.16g/g. The rate of glucose absorption is 23.4%.The rate of cholesterol absorption is 22.6%.The study provided the references for extracting dietary fiber and the development of the pomelo peel.
