摘要:本课题以汾酒、红星二锅头酒、杏花村世家酒为代表的清香型白酒为主要 研究对象。首先,通过顶空固相微萃取法(SPME)对清香型白酒进行预处理实验, 再通过二维气相色谱质谱逐个定性定量地分析白酒中的香气成分。实验结果表 明:汾酒测出香气成分 255 种,红星二锅头酒测出香气成分 250 种,杏花村世家酒测出香气成分 218 种。其中,含量最多的是酯类化合物,还有醇类、酮类、酸 类、醛类、内酯类、含氮化合物、含硫化合物和乙缩醛类化合物。66250

Identification of Aroma Components in Light Aroma Type Liquor by Two - dimensional Gas Chromatography - Mass Spectrometry
Abstract : As the representative of the light aroma type liquor ,Fenjiu, Red Star Erguotou wine, Xinghua village shijia wine are the main research objects of the subject.Firstly, the pretreatment experiment was carried out by the solid phase micro extraction process(SPME), and the aroma components in the liquor were analyzed qualitatively and quantitatively by two-dimensional gas chromatography-mass
spectrometry.The results showed that there were 255 kinds of aroma components in Fenjiu, 250 kinds of aroma components were detected in Hongxing Erguotou wine, and 218 kinds of aroma components were measured in Xinghua village shijia wine.Among them, the most content is the ester compounds, as well as alcohols,
ketones, acids,aldehydes,lactones, nitrogen compounds, sulfur compounds and acetal compounds.
