    First of all, I am especially grateful to Mr. who taught us the course of English Testing Theory and Practice. He enlightened me on how to write a thesis, thus enabling me to find a research topic of my interest and come up with a well-structured outline.34056
    Second, I would extend my sincere thanks to my instructor, Mr. Yin Guoliang, for his guidance in the whole of process of thesis writing. He has provided me with many insightful ideas on how to perfect the outline and helped me to polish up my writing.

    Abstract
    Nowadays, an increasing number of foreign guests come to China for tourism and study, and tasting the local food has become an important part of their cultural experience. Therefore, it is essential that translators should ensure the quality of the translation of the Chinese dish names, which could have direct influence on the cultural exchange between the Chinese and foreigners. Correct translation can reduce the obstacles and conflicts of cross-cultural communication while wrong translation could lead to cultural misunderstanding and even ill feelings.
    Due to the close relationship between food and culture, different countries have their own culinary culture with unique features. There exist huge differences between Chinese and western culinary cultures in terms of the concept, ingredients, table manners and so on. Chinese food culture reflects humanism and esthetics, while the western counterpart emphasizes science and pragmatism. As a matter of fact, it is the difference in the way of thinking that makes the culinary culture of China and west distinctive.
    Based on the analysis of the different culinary culture existing in China and the West, this paper intends to probe into the problems in the translation of Chinese dish names, and introduce some translation principles, methods and skills that could be employed in translating Chinese dish names. The paper falls into five parts. The first part serves as an introduction. The second part aims at analyzing the different characteristics of culinary culture of China and Western Countries. The third part examines the problems existing in the translation of Chinese dish names and the reasons behind them. The fourth part pinpoints the translation principles used in translating Chinese dish names. The fifth part functions as a conclusion.

     摘要
    随着外开放、中外交流的不断扩大,越来越多的外国客人来华观光旅游以及工作学习,品尝具有民族特色的美佳肴是中外文化交流的重要组成部分。由于饮食和文化紧密联系,不同国家的饮食文化具有不同的特点。中西方饮食文化在观念、内容、礼仪等方面存在着很大的差异。中国饮食文化依托人文,注重审美感受;而西方则推崇科学,强调实用。这种思文方式的差异导致了中西方饮食文化的差异。
    在现代化的中国,翻译者应该借鉴饮食文化差异促进提高菜名英译的质量。菜名的翻译质量直接影响到进入全球市场的中国饮食工业。正确的翻译可以缩小跨文化交际中的障碍,有利于避免在跨文化交际中发生冲突,以及对于传播饮食文化也具有举足轻重的作用。
    本文试图通过分析中西方饮食文化差异,发掘目前中国菜名英译存在的问题,并结合实例归纳总结中式菜肴名称的翻译原则、方法和技巧。本篇论文共分为五部分。第一部分介绍研究的背景。第二部分阐述了中西饮食文化的不同特点。第三部分提出翻译中国菜名中存在的问题以及背后的原因。第四部分探讨中国菜名英译的方法。第五部分为研究的结论。
